The Flavors of Sichuan
A Tribute to the Art of Sichuan Cuisine
In 2019, I was invited to travel to Chengdu, China, to photograph a series of plated dishes for a menu showcasing the 24 Flavors of Sichuan Cuisine. This project was curated by Desmond Chang, owner of Ruyi, a manufacturer of high-end, elegant ceramic dinnerware. Desmond was collaborating with Chef Xu Fan, an award-winning Sichuan chef who owns more than ten restaurants in Chengdu. The goal was to create a menu for a special dinner called Ruyi Gastronomy.
While working on this project, Desmond and I began discussing Sichuan and the unique aspects of its cuisine. During our conversation, Desmond proposed the idea of creating a coffee-table-style book. He explained that the book should explore the many facets that contribute to Sichuan cuisine which includes culture, geography, history, people, farming, ingredients, and techniques. I found the idea very intriguing.
So, we planned a series of trips to Chengdu, during which we would travel across the province to photograph the diverse elements that, in our view, make Sichuan cuisine so extraordinary.
The Covid 19 Pandemic through a wrench into our plans and the project was put on hold for three years.
Then 2023 we were ready to restart the project and wasted no time getting back to work.
In addition to photographing the various aspects mentioned above it became clear that we needed somehow photograph the various flavor profiles often referred to as “The 24 Flavors of Sichuan Cuisine”. To do this our approach was simple. Chef Xu Fan would create a dish in which one of the Sichuan Flavor Profiles was attributed to that dish.
While working on this project I began to question this label of “24 Flavors” and asked if there was truly a finite number of flavor profiles. The answer was that there is no exact number and, in fact, the number of flavor profiles continues to grow. By the time we were ready to publish we realized that we had identified a total of 30 flavor profiles.

As my body of work from Sichuan developed and grew I could see that an exhibition would be a wonderful way to share my experiences with those interested in both documentary photography as well as the food loving public.
Since I’m based in Macau, China I decided this would be the exhibition’s inaugural location. I knew of a small gallery located in a historic part of Macau so approached the gallery manager/curator, Pamela Chan, to introduce her to my work. She had an immediate positive reaction so we selected to hold the exhibition in the Fall of 2025.
For the exhibition I selected 35 color and black & white images that visually explore the various aspects of what contributes to the making of Sichuan cuisine.
